We’re On The Move with Mobile Equipment!

You might be wondering if having mobile equipment in your kitchen is right for your operation.

In any commercial kitchen, flexibility is important. We’re seeing requests for modular equipment layouts to address a need for service that is constantly changing.

Nimbus Kitchen, a recent ghost kitchen model that was supplied by Singer, has outfitted their entire kitchen with mobile equipment. This allows its operator partners to have efficient access to all the equipment they need and tuck away the equipment they don’t need when working in their spaces.

One such piece of equipment was their Blodgett combi-oven.

“The Blodgett combi oven is versatile because it facilitates ever-evolving menus and concept changes. It provides ultimate flexibility on an extremely robust frame,” says Joe Ferri of Pecincka Ferri.

The Nimbus team selected two other masterful workhorses when it came time to putting their equipment on wheels.

“Southbend and Globe are equally known for their heavy-duty construction and reliability,” says Ferri, “Food preparation and primary cooking form the basic building blocks of any successful kitchen; Southbend and Globe deliver on their promise to endure the harshest extreme use conditions while continuing to perform.  Mobility presents challenges that economy equipment choices just are not up to facing.”

Our team couldn’t agree more.

“It’s great to have the ability to pivot service,” says Joe Revitte, Equipment Specialist for Singer. “For example, an operator can move storage wire shelves for busy take out/delivery periods and then move the shelves when they have slower traffic to make room for sit down service. Another benefit is using a mobile worktable in a kitchen with limited space that can perform double duty as a prep space and then moved to be used as a pass-through.”

There are enormous advantages to having a set of casters installed on your equipment. Minimizing the time you need to clean is the first.

“The main benefit of equipment mobility is sanitation,” says Ferri. “It also makes servicing equipment faster and more efficient.  An additional benefit is modularity, the ability to more readily reconfigure the kitchen is facilitated.”
